Isn't fresh fish better quality than frozen?
No. Not unless you eat your fish within a few hours of catching it. The vast majority of what is sold as fresh fish in grocery stores is actually subjected to a special method of rapid freezing at sea. This preserves the freshness and structural integrity of the meat much better than merely cooling it. Even sashimi is usually quick frozen for reasons of safety, quality, and ease of handling.
